An estimated 3 million people in the United States, as many as 300,000 Canadians and approximately 1 % of the European population has been diagnosed with celiac disease.
Celiac disease is now recognized as one of the most common chronic diseases in the world. The purpose of this training is to provide an overview of celiac disease and gluten sensitivity. The term gluten will be defined along with the identification of common sources of gluten. If you produce gluten-free products, this course will also assist your food handlers to understand the importance of gluten.

At the completion of this course, it is expected that you will be able to:
- Define gluten and the differences between celiac disease and non-celiac gluten sensitivity
- Identify the impact that celiac disease has on individuals
- Demonstrate an understanding of why the food industry is required to manage gluten containing food and products
- Recall different food handler responsibilities and GMP’s relating to gluten management
There are no pre-requisites for this course.
AWARDS AND CERTIFICATES
A Certificate of Competency will be provided after you have successfully completed this course (including the knowledge assessment). The criteria to earn a Certificate of Competency and corresponding CEUs for this course includes:
- Successfully completing each of the course lessons and final assessment
- Achieving a pass mark of 80% or more on the final knowledge assessment

This training is suitable for those responsible for handling food within a food manufacturing or production environment. This includes:
- Food production staff
- Food Safety and Quality System staff

- Any person responsible for handling food within a food business
It is also suitable for any business who maintains "Gluten-Free Certification" and is required to educate staff in Gluten Awareness.

This training is delivered online. The HACCP Mentor training videos are able to be viewed on almost every OS including Mac OS, Windows and Linux. You should also be able to view this training on your apple or android mobile device (with the exception of Blackberry device).
While we should work with all of the major browsers and current versions of Internet Explorer, Firefox, Safari, Chrome, Opera, etc., it is recommend that you view this training using Google Chrome browser. Online training delivered through the HACCP Mentor website uses online videos which will work on any browser that supports Adobe Flash and/or HTML5.
