An estimated 3 million people in the United States, as many as 300,000 Canadians and approximately 1 % of the European population has been diagnosed with celiac disease.

Learning Outcomes

At the completion of this course, it is expected that you will be able to:

  • Define gluten and the differences between celiac disease and non-celiac gluten sensitivity
  • Identify the impact that celiac disease has on individuals
  • Demonstrate an understanding of why the food industry is required to manage gluten containing food and products
  • Recall different food handler responsibilities and GMP’s relating to gluten management

Award

A Certificate of Competency will be provided after you have successfully completed this course (including the knowledge assessment). The criteria to earn a Certificate of Competency and corresponding CEUs for this course includes:

  • Successfully completing each of the course lessons and final assessment
  • Achieving a pass mark of 70% or more on the final knowledge assessment
