An estimated 3 million people in the United States, as many as 300,000 Canadians and approximately 1 % of the European population has been diagnosed with celiac disease.
Celiac disease is now recognized as one of the most common chronic diseases in the world. The purpose of this training is to provide an overview of celiac disease and gluten sensitivity. The term gluten will be defined along with the identification of common sources of gluten. If you produce gluten-free products, this course will also assist your food handlers to understand the importance of gluten.

At the completion of this course, it is expected that you will be able to:
- Define gluten and the differences between celiac disease and non-celiac gluten sensitivity
- Identify the impact that celiac disease has on individuals
- Demonstrate an understanding of why the food industry is required to manage gluten containing food and products
- Recall different food handler responsibilities and GMP’s relating to gluten management

A Certificate of Competency will be provided after you have successfully completed this course (including the knowledge assessment). The criteria to earn a Certificate of Competency and corresponding CEUs for this course includes:
- Successfully completing each of the course lessons and final assessment
- Achieving a pass mark of 70% or more on the final knowledge assessment
